SOME of Britain's best young seafood chefs are to be found, not at the coastal fishing ports, but in the heart of the Midlands.
Students from University College Birmingham picked up top prize at the UK Seafood Championship held in Grimsby.
The Grimsby Institute of Further and Higher Education was an explosion of talent as another fish contest got under way featuring competitors from several colleges around the country.
During the day, competitors prepared three fish dishes for six covers, including a starter, soup and main course, all of which had to be produced using fish from sustainable sources as outlined in the competition guidelines.
It was the team from Birmingham that triumphed, winning £2,000 for both the college and the competitors,as well as a one week placement with top seafood chef Mitch Tonks. Kendal College and the Grimsby Institute came second and third respectively.
Nick Welsh from the winning team said: 'This is going to open so many opportunities for us.'
The highly acclaimed annual competition which is organised by the institute, is open to full-time catering or college based modern apprenticeship students throughout the UK and sponsored by Young’s Seafood, The Seafish Industry Authority, Grimsby Fish Merchants Association, Billingsgate Seafood Training School and National Federation of Fishmongers and local Grimsby area businesses.
The judging was led by Mitch Tonks, who is Tatler's restaurateur of the year, and the panel also included Grimsby MP Austin Mitchell and Steve Norton of the Grimsby FMA.
